Nutritious Brownies


 Studying childcare, as you do, I was asked to present a nutritious snack for a child aged 5-8. My favourite thing to eat? Brownies! But how are they nutritious? After tweaking the recipe i came up with a way. Enjoy :)

Prep: 15-20mins
Cooking time: 50 mins @ 140 Degrees Celsius Fan Forced

Ingredients:
 150g Nutterlex (or butter)
1/2 cup brown Sugar
2 eggs
1/4 cup wholemeal flour
1/4 cup pure cocoa (no added sugar)
1tbs Honey

Additional ideas:
Up to half a cup of chopped up apricots, raisins, sultanas and/or nuts to flavour it. 


Method:
Cream Nutterlex and Brown sugar. Beat in eggs. Mix in shifted Flour and Cocoa. Add Honey. Mix well. Fold in the Apricots, Raisins and/or nuts. Cook in over at 140 Celsius for 45-50 mins. Leave to cool before cutting or will crumble. Store in air tight container at room temperature. Will last 3-5 days well. Its a guilt free snack with taste!

Ps: Works well with GF flour too!
